Artusi and Florence cuisine


Do you want to have fun in the kitchen?
Then there is no doubt you must have a copy of "Artusi".
Now the book that Pellegrino Artusi wrote in 1891 is simply called with its author’s surname “Artusi” and no longer with its real title: "The science of cooking and the art of eating well."
At first the book seemed to be destined to be soon forgotten. It had to published at Artusi’s own expenses and was immediately torn down by some critics (see the very bad opinion of Professor Trevisan who sentenced that: "This is a book that will have little success").
But success came in the end and it was overwhelming: in twenty years 14 editions were printed and in 1931 they were 32!
"Artusi" became one of the most widely read books by the Italians, along with"I promessi sposi"("The Betrothed") and "Pinocchio."

The book contains 790 recipes, from soups to liquor, through broth, appetizers, second courses and desserts.

The approach is didactic ("with this practical manual - writes Artusi - you only need to know to keep a spoon in hand") and at the same time characterized by anecdotes and reflections written in an interesting and witty way. A real pleasure!

This year, on the occasion of the centenary of the death of Pellegrino Artusi, Florence city organised "DEGUSTATIPICO – EATING WITH ARTUSI"
Many Florence restaurants will offer, from July 23 till July 30, their usual menu with at least two recipes inspired by Artusi’s book, using local products.
